sweet potato waffles

Sweet Potato Waffles


Serves: 6 waffles
Prep time: 10 minutes
Cook time: 1 hour

Ingredients:
1 cup mashed sweet potato
3 large eggs, room temperature, whisked
3 tablespoons honey
1 teaspoon vanilla extract
2 tablespoons butter, melted
1 cup blanched almond flour
1/3 cup tapioca flour/starch
1/2 teaspoon baking soda
1/2 teaspoon baking powder
1/4 teaspoon ground cinnamon

biscuits

These biscuits are crispy and flaky on the outside and soft and chewy on the inside. Serve them with butter, jam or plain on their own. They tasted amazing warm and crispy right out of the oven.

strawberry rhubarb crisp (paleo)

I received rhubarb in my CSA this year which was fun since I've never made anything with rhubarb before. I've had rhubarb torte in the past but really only liked it for the sugar topping and since I do my best not to eat sugar these days, I needed to find a healthier recipe. I did find this on the sweeter side so I may make it with less honey in the future but for people who like a sweeter desert, this is up your alley!

paleo granola

Does anyone else bring measure cups to the grocery store with them because I totally do. 1/4 cup of this nut and a 1/2 cup of this nut, I don't want to have to buy big bags of all these different nuts. I'm sure I'd use them eventually but I like having the exact amount so I'm not tempted to eat the leftovers or have bags of nuts sitting in my cupboard. So I bring my measure cups to the bulk bins and portion out what I need. Works for me!

super green smoothie

I could start each post saying the exact same thing about the recipe. "I found this recipe, love it and can't stop thinking about it." That's the basic story for me and food. If it's delicious, I can't stop thinking about it.

I love smoothies and wanted to get more greens into my day. Normally I'm a chocolate person but I love the tangy-tart feel of this recipe. Once again I find myself having one every morning and then sad I have to wait until the next day to have another. So very yummy!

It seems like a lot of ingredients and time consuming but I cut up everything and add the dry stuff to my ninja at night, put it in the fridge and add the wet and frozen ingredients in the am.

I had one this morning. I want another one....

chocolate chip coconut cookies

Almond Meal Cookies
Who doesn't love cookies! I don't make cookies often because I will want to eat them all in one sitting but when I do get a craving for a good cookie or something to take to a party, these chocolate chip coconut cookies are an easy go to. The directions to say to mix the dry ingredients together and then the wet ingredients before combining but I throw in all in my food processor and mix it together and add chocolate chips at the end and it works out great. Easy to make and simple ingredients.

I like recipes with minimal steps where I can add it all to my food processor and have something delicious come out. I also like having an option for my ripe banana's sitting on the counter.

This one is delicious and simple. I have trouble keeping myself from eating half the loaf in one sitting.

Coconut Banana Cream Pie
This is a delicious desert and an easy one to make. It does require 8 hours of time in the refrigerator so make it the day ahead. There's no baking required and very few ingredients needed.

Keep in mind coconut and almonds are going to be high in calories but these are healthy fats in the same way that eating an avocado is good for you. High in fat but good fat. It's all about moderation.

mexican chocolate pudding

Mexican Chocolate Pudding
I had a friend request this recipe several times and referred to it as "pudding for grown-up." I'm guessing it's the avocados and lack of artificial everything they put in store bought puddings that makes it "grown-up."

If you are not a fan of avocado, have no fear as you will not taste it but it will help to give the pudding it's creamy texture. My husband does not like avocados and still enjoys this desert.

Cookies, ah - the joy of life.  Warm, chocolatey goodness can always make the day feel so much better. What I love about these cookies is that they only make 8. This is helpful for those that have low self-control. If you make a batch of cookies and have 24 tempting cookies waiting for you to eat, it will most likely end in disaster with you eating more than you wanted to. This recipe works for me when I am in the mood for a good chocolate chip cookie but only want a few. It has simple ingredients, is a healthier version of a chocolate chip cookie and still tastes great!

All I can really say is yum. Super yum!

Confession, I had to make this recipe twice because the first time I made it I practically ate the whole thing out of the pan. Seriously! I didn't even put it in the freezer to let it harden because I made it around 3 pm and my afternoon snacking monster kicked in and I have a weakness for chocolate. But it's cacao powder and beets. Not sugar and high fructose corn syrup. It's vegetable chocolate healthiness! Luckily I made half a batch the first round to see if I really liked it. Yup, I think I might be in love.

A warning to all - I found these fantastic and didn't want to stop at one. What is my deal? I can't seem to handle having yummy treats in the house without wanting to eat them all myself in one day. I really like baking and trying new recipes. My friends and family need to invite me to more events so I can bake, bring, eat one myself and not feel guilty for eating the whole thing.

Sweet Potato Brownies
I really enjoy baking but I'd rather not exercise my will power to withstand having 24 brownies in my house. I want to be able to make a healthy treat option but also keep the recipe low in servings so that I am not tempted. This version creates 12 brownies but can easily be doubled if you are baking for a larger group. It's super moist and delicious but without all the loaded sugar found in traditional brownies.

minty thins

Minty - Thins
Girls Scout Cookies!!! Sigh - Oh, so delicious. I once at half a box of thin mint chocolate cookies as a kid and um, it didn't end well but they were so good I couldn't resist.

I was so excited to find this recipe and hopeful that if my willpower failed me again and I ate the whole batch of cookies, I would at least feel better knowing it has healthier ingredients.

cauliflower "popcorn"

I honestly love popcorn. As a kid I'd melt a bunch of butter and have my popcorn swimming in it. Deliciously slathered! Ah, the good old days. I of course went the microwave route which was the only option I knew as a kid. Side note, does anyone remember the days of popcorn that was different colors? You'd have a bag of green, blue or purple popcorn. Did I make this up?
