chocolate muffins

Chocolate Muffins
A warning to all - I found these fantastic and didn't want to stop at one. What is my deal? I can't seem to handle having yummy treats in the house without wanting to eat them all myself in one day. I really like baking and trying new recipes. My friends and family need to invite me to more events so I can bake, bring, eat one myself and not feel guilty for eating the whole thing.

The original recipe comes from Landria Voight, Super Paleo Snacks

Chocolate Muffins:

Serves: 12 muffins

Ingredients:
  • 1/2 cup almond meal (ground up almonds)
  • 1/2 cup coconut flour
  • 1/3 cup cacao powder
  • 3/4 tsp baking soda
  • pinch of sea salt
  • 4 eggs, at room temperature
  • 1/2 cup honey
  • 1 tsp vanilla extract
  • 1/2 cup coconut oil, melted
  • 1/4 cup mini chocolate chips for top
Cooking Directions:
Set your eggs out and let them come to room temperature before you begin. Preheat the oven to 350 and line a muffin pan with 12 paper liners.

In a mixing bowl, combine the almond flour, coconut flour, cacao powder, baking soda & salt.

In a separate bowl, whisk the eggs, then whisk in the honey and vanilla. Add the coconut oil and stir until smooth. Fill each paper cut about 2/3 full and top with chocolate chips. Bake for 20 minutes or until toothpick comes out clean.
