Chocolate Chip Cookies
Cookies, ah - the joy of life.  Warm, chocolatey goodness can always make the day feel so much better. What I love about these cookies is that they only make 8. This is helpful for those that have low self-control. If you make a batch of cookies and have 24 tempting cookies waiting for you to eat, it will most likely end in disaster with you eating more than you wanted to. This recipe works for me when I am in the mood for a good chocolate chip cookie but only want a few. It has simple ingredients, is a healthier version of a chocolate chip cookie and still tastes great!

All I can really say is yum. Super yum!

 

 

 

 

Chocolate Chip Cookies - Paleo

Serves: 8 cookies

Ingredients:

3/4 cup almond meal
1/2 tsp baking powder
1 tbsp coconut flour
1 tbsp honey
1 tsp vanilla
1 tbsp coconut oil
2 tbsp almond milk, unsweetened
1 large egg
2-3 tbsp non-dairy chocolate chips (enjoy life)

Cooking Directions:
Line a baking sheet with parchment paper or spray with coconut oil and preheat oven to 350 F.

Stir the almond meal, baking powder and coconut flour in a medium bowl. Add remaining ingredients and stir to mix well.

Use a 1 1/2 tbsp cookie scoop and form into 8 balls, spacing evenly.

Bake for 8-10 minutes. Let them cool to firm up, about 5 minutes.
