south of the border loaded sweet potato

South of the Border Sweet Potato
I saw this recipe for South of the Border Loaded Sweet Potatoes while watching an episode of The Biggest Loser and found that it's a great meal to make when you are short on time. It's filling, requires only a few ingredients, and you can serve it with some steamed veggies or a side salad and have dinner ready in 15 minutes.

South of the Border Loaded Sweet Potatoes are also a great meal for one. Use 1 (8 oz) sweet potato, 4 ounces of turkey, 3/4 tsp of fajita seasoning, 1/3  cup of salsa and 2 tbsp of Greek-yogurt and you have an individual meal! Super easy!

South of the Border Loaded Sweet Potato

Ingredients:
  • 5 (6-8 ounce) sweet potatoes
  • olive oil
  • 4 tsp fajita seasoning
  • 1.25 turkey (I like Jenni-O)
  • 1 & 3/4 cup salsa (1/3 cup per potato)
  • fat-free Greek yogurt (2 tbsp per potato)
Cooking Directions:

Wash potatoes and poke with a fork on all sides. Place on a microwave-safe place, cover with a paper towel and microwave on high for 3 minutes. Turn and do an additional 2-4 minutes. Use a fork to see if potatoes are tender or need to cook longer. You may want to do 2 potatoes at a time.

Meanwhile, in a small bowl, mix the turkey and the fajita seasoning.

Spray olive oil on a pan and set to medium heat. Cook the turkey for 3 to 4 minutes or until no longer pink. Make sure to break up as you cook.

Cut an opening in the potato that is deep enough to open the potato without cutting it in half. Stuff the potato with salsa, 4 oz of turkey (turkey will not all fit - it's ok to have some one the side) and top with yogurt. Dig in!
