biscuits

These biscuits are crispy and flaky on the outside and soft and chewy on the inside. Serve them with butter, jam or plain on their own. They tasted amazing warm and crispy right out of the oven.

Biscuits

Serves: 8

Ingredients:

1 cup tapioca flour
1/3 cup coconut flour
2 tsp baking powder
1/2 tsp sea salt
1/2 cup butter, chilled
1 egg
1/3 cup cold water

Directions:

1. Preheat oven to 400F. Line a baking sheet with parchment paper.

2. In a large bowl, whisk together the tapioca flour, coconut flour, baking powder and salt.

3. Cut the butter into tsp size chunks and add to the flour mixture. Use your hands to rub and squish the butter into the mixture until it starts to look crumbly.

4. Add the egg and water and mix with your hands until all ingredients are well combined.

5. Use your hands to form 8 round discs and place them onto the parchment paper. Make sure the biscuits do not touch.

6. Bake about 20 minutes or until the bottoms are slightly brown.
