coco-nutty granola



Coco-Nutty Granola
This tasty, crunchy granola is great on top of plain Greek yogurt. Pretend you are at a soft serve ice cream shop with topping selections but you leave without the sugar rush and grimy teeth! Mmm!











Coco-Nutty Granola

Calories per serving: 135 (1/4 cup)
Ingredients:
  • 1.5 tbsp coconut oil (melted)
  • 1.5 cups coconut flakes (unsweetened)
  • 1 tbsp chia seeds
  • 1 cup almonds, chopped roughly (or mixed nuts)
  • 1 tsp cinnamon (optional)

Cooking Direction:

Preheat the oven to 250 F. Mix coconut flakes, chia seeds, almonds & cinnamon in a bowl. Pour melted coconut oil over mixture and stir.
Put parchment paper over a rimmed baking sheet and spread in an even layer. Bake for 15-20 minutes or longer if you like it crunchier turning halfway. (I prefer 40 minutes for extra crunch.)
Remove and cool immediately to get crispy.
