sweet potato waffles

Sweet Potato Waffles


Serves: 6 waffles
Prep time: 10 minutes
Cook time: 1 hour

Ingredients:
1 cup mashed sweet potato
3 large eggs, room temperature, whisked
3 tablespoons honey
1 teaspoon vanilla extract
2 tablespoons butter, melted
1 cup blanched almond flour
1/3 cup tapioca flour/starch
1/2 teaspoon baking soda
1/2 teaspoon baking powder
1/4 teaspoon ground cinnamon


Directions:
1. Preheat oven to 425 F. Wrap a sweet potato in foil and bake 35 to 40 minutes, until soft.

2. Let the sweet potato cool, peel off skin, place flesh in a food processor and blend until smooth.

3. Mix the eggs, honey, vanilla extract and butter until smooth.

4. Add the flours, baking soda, baking powder and cinnamon until smooth.

5. Heat a waffle iron and ladle 1/3 cup of batter onto the iron. Cook about 5 minutes. Cook time will vary depending on iron. Cook until crispy on the outside, set aside and repeat until batter is all used.

6. Store leftovers in the fridge or freezer and toast before serving.
