chocolate chip coconut cookies

Almond Meal Cookies
Who doesn't love cookies! I don't make cookies often because I will want to eat them all in one sitting but when I do get a craving for a good cookie or something to take to a party, these chocolate chip coconut cookies are an easy go to. The directions to say to mix the dry ingredients together and then the wet ingredients before combining but I throw in all in my food processor and mix it together and add chocolate chips at the end and it works out great. Easy to make and simple ingredients.

Chilling it in the fridge will help make them firmer and easier to shape into balls. Good luck not eating the batter before you make them into cookies!

Chocolate Chip Coconut Cookies

Ingredients:

1 1/4 cup almond meal
1/4 cup chocolate chips
1/2 cup shredded coconut, unsweetened
1/2 tsp baking powder
1/4 tsp sea salt
1/3 cup brown sugar or coconut sugar
1 egg
3 tbsp coconut oil, melted
1/2 tsp vanilla

Cooking Directions:

Using a large mixing bowl, stir together almond meal, chocolate, coconut, baking powder, salt and sugar.

In a smaller mixing bowl, whisk the eggs until they double in volume. Whisk in the coconut oil and vanilla, then pour into dry ingredients and stir to combine well.

Chill in the fridge for at least 30 minutes or overnight.

Preheat oven to 375 F.
Shape dough into 1 inch balls, and space evenly. Press down slightly to flatten. Bake 7-10 minutes or until edges begin to brown. Let cool before serving.
