Asian Turkey Meatballs with Lime Sesame Dipping Sauce
The original recipe for Asian Turkey Meatballs comes from Gina Homolka's blog skinnytaste which has amazing, healthy, easy recipes and I highly recommend checking out her blog or cookbook The Skinnytaste Cookbook.

This recipe is great for getting dinner on the table in less than 30 minutes. It's easy to make, tasty and goes well with zucchini noodles.


Asian Turkey Meatballs with Lime Sesame Dipping Sauce

Servings: 4 (3 meatballs per serving)

Ingredients

For the Meatballs:
  • 1/4 cup almond meal
  • 1.25 lbs ground turkey (I use Jenni-O)
  • 1 large egg
  • 1 tbsp ginger
  • 1 clove garlic, minced
  • 1/2 tsp salt
  • 1/4 cup chopped fresh cilantro (lower amount if using dried cilantro)
  • 3 green onions, chopped
  • 1 tbsp low sodium soy sauce
  • 2 tsp sesame oil
  • olive oil
For the Dipping Sauce:
  • 3 tbsp low sodium soy sauce
  • 1 1/2 tsp sesame oil
  • 1 1/2 tbsp fresh lime juice
  • 1 1/2 tbsp water
  • 1 tbsp green onions, chopped
Cooking Directions:

For the Meatballs:

Preheat oven to 500 F. Using a fork or your hands, mix the almond meal, ground turkey, egg, salt, green onions, ginger, cilantro, 1 tbsp soy sauce and 2 tsp sesame oil in a large bowl. Shape into 12 meatballs by measuring out a 1/4 cup per meatball and place them on a baking sheet that has been sprayed with olive oil. Bake 15-18 minutes or until cooked through.

For the Dipping Sauce:
Mix the soy sauce, sesame oil, lime juice, water and green onions and set aside.

Once the meatballs are cooked, transfer them to a plate (3 meatballs per serving) and drizzle with the sauce. Serve the remaining sauce on the side for dipping. This meal goes well with zucchini noodles.
