roasted red pepper hummus and feta pita sandwich

Pita Sanwhich
This will spice up your normal sandwich routine for sure! Grab a container of your favorite hummus spread (roasted red pepper), feta (tomato and basil), cucumbers, tomatoes and spinach leaves and pile inside a toasted crunchy pita pocket. It's so simple and only requires a few minutes to cup up the veggies. 

I would suggest paying close attention to the pita pockets you select. Lots are loaded with ingredients I can't pronounce and sugar. Look for a brand that is made with 100% whole wheat, no added sugar and only 4 ingredients. 

Feta and Hummus Pita Sandwich  

Serves: 1 sandwich

Ingredients:

1/2 pita pocket
2 tbsp hummus (roasted red pepper)
2 tbsp feta (tomato & basil)
4 cherry tomatoes, sliced
1/4 cup spinach leaves
1/4 cup cucumbers, sliced

Directions: 

Slice a whole pita pocket in half and toast. Insert all remaining ingredients inside the pocket or leave on the plate what doesn't fit inside. Easy lunch or dinner and super tasty!
