spicy stuffed plantains

Spicy Stuffed Plantains

Serves: 4

Ingredients:

4 brown plantains (make sure they are brown so they are sweet but not too soft)
3 tbsp ghee, coconut oil or butter, divided
2 cloves garlic, minced
1/2 red bell pepper, diced
1/4 medium red onion, diced
1 lb ground turkey (or beef)
1 tsp sea salt
1 tsp garlic powder
1/2 tsp chili powder
1/4 tsp red pepper flakes
pinch of black pepper
1/4 cup fresh cilantro, finely chopped, & extra for garnish
3 tbsp tomato paste

Directions:

1. Preheat oven to 350 F & line a baking sheet with parchment paper.
2. Cut the ends off the plantain, peel and cut a slit down the middle. Don't cut them completely in half. Use your fingers to pull them apart to create a boat.
3. Brush with 1 tbsp ghee and bake for 20 minutes or until soft.
4. In a large saute pan, melt 2 tbsp of ghee over medium heat. Add the garlic and saute for 1 minute. Add the red pepper & onion and cook for 5 minutes or until translucent.
5. Add the turkey & cook until browned. Add the salt, spices, cilantro & tomato paste and mix to combine.
6. Once plantains are cooked, spoon mixture into the boat & bake for an additional 10 minutes.
