zucchini noodles


Zucchini Noodles
Zucchini Noodles are a fun way to spice up your veggies. You can use them to replace pasta noodles or serve on the side. If you don't have a spiralizer to create a noodle texture, you can still follow this recipe and cut the zucchini into your preferred shape or size.

This recipe for zucchini noodles come from Gina Homolka's blog skinnytaste and goes well with Asian turkey meatballs with lime dipping sauce.

Zucchini Noodles

Ingredients:
  • 1 tbsp extra virgin olive oil
  • 1/4 cup red onion, diced
  • 3 cloves garlic, minced
  • 3 (8 oz each) zucchini's
  • salt & pepper to taste
Cooking Directions:
For this recipe, I used a Veggetti to make noodles but you can cut them into long julienne strips, circles or find what is easiest or your preferred texture.

Heat a large non-stick skillet over medium heat. When hot, add the oil, onions and garlic and cook until fragrant. (1 to 2 minutes). Increase heat to medium-high and add the zucchini's. Season with salt and pepper to taste, stir and cook an additional 2 minutes or until vegetables are cooked through yet firm.

Great with Asian turkey meatballs with lime dipping sauce.
