Pistachio Crusted Salmon
Here is another easy dinner that you can have ready in under 30 minutes. With only a few ingredients and easy prep time, this pistachio crusted salmon may be your new "go-to" salmon recipe as it has been a huge hit in my house. Enjoy salmon topped with an orange dijon mustard sauce and crunchy chopped pistachios. Serve with steamed veggies or a side salad and you have a healthy, simple dinner.

Pistachio Crusted Salmon

Serves: 4

Ingredients:

Olive Oil
1/2 cup unsalted shelled pistachios, finely chopped
4 tsp Dijon mustard
1 tbsp orange juice
1/4 tsp salt
1/2 tsp pepper
4 skin-on salmon fillets (6 oz each)
2 bunches spring onions or scallions, trimmed

Cooking Directions:

Preheat oven to 375 F. Spray a baking sheet with olive oil.

Place chopped pistachios on a shallow plate. (I used my ninja to chopped them up)

Using a small bowl, stir together the mustard, orange juice, salt and pepper. Brush the sauce onto the flesh side of the salmon and press into pistachios. Place salmon on the baking sheet skin side down and cook through, about 10 minutes. Transfer to a plate.

Turn broiler on high, spray a baking sheet with olive oil and place onions baking sheet. Broil until brown and starting to wilt, 2 to 4 minutes. Serve salmon with onions.

*Note: I defrost my salmon and then lightly pat it with a paper towel before putting the sauce and pistachios on it.
