mexican turkey burgers

Mexican Turkey Burgers
I saw this recipe on an episode of Biggest Loser and thought it was a great twist on a way to make a plain turkey burger more exciting. This recipe has been a repeat in my house because it's tasty and easy to make. I prefer to eat mine without cheese but it's a great addition if you'd like. Make sure to dice everything up small so the pieces stay in your burger and don't fall out while cooking.

Top them with salsa, avocado, yogurt & a bun & dinner's ready!



Mexican Turkey Burgers

Yield: 7
Calories per serving: 127 (does not include cheese or optional toppings)

Ingredients:
  • 1.25 lbs ground turkey - 93% lean
  • 1/4 cup cilantro (or to taste if using dried)
  • 1/4 cup red onion, diced
  • 1/4 cup red pepper, diced
  • 1/3 cup mushrooms, diced
  • 1 tbsp fajita seasoning
  • 1 tsp garlic, minced
  • 1/4 cup cheese
  • buns
  • salsa
  • avocado, sliced
  • Greek yogurt
Cooking Directions:
In a large bowl, combine turkey, cilantro, onion, pepper, mushroom and seasoning (optional to add cheese). Use a fork or get in there with your hands until it's all mixed together. Form into 7 patties.

Spray a pan with olive oil and set at medium heat. Grill the burgers for about 3 minutes on each side or until cooked through.

Add any additional toppings or eat them as is. Great either way.
