Honey Lemon Sticky Chicken
Ingredients:3 tablespoons butter,
ghee or coconut oil
1/4 medium sweet onion, minced
1 clove garlic, minced
1 pound boneless, skinless chicken breasts, diced small
1 teaspoon sea salt
1 teaspoon garlic powder
For Sauce:1/4 cup chicken broth
1/4 cup plus 1 tablespoon honey
1/4 cup lemon juice
2 tablespoons coconut aminos
1 teaspoon ginger
1 teaspoon coconut vinegar
1 batch Cauliflower Rice
1 tablespoon sesame seeds
chopped scallions, for garnish
1/4 teaspoon black pepper
Directions:
- Melt the butter in a large saute pan over medium heat. Add the onions and garlic and saute for about 5 minutes or until onion is translucent.
- Season the chicken with salt and garlic powder and add to the pan. Once cooked, place chicken on a plate.
- In a medium bowl, whisk together the sauce ingredients.
- Reduce the heat to medium-low and pour the sauce into the same large saute pan. Bring to a low bowl for about 10-15 minutes or until the sauce has reduced by one-third.
- Once the sauce is thickened, add the chicken to the pan and cook for an additional 2 minutes to warm and coat the chicken with the sauce.
- Serve over cauliflower rice, garnish with sesame seeds, scallions and black pepper.
