zucchini boats

Zucchini Boats
Summer time means nice fresh zucchini's. There is nothing better than picking them from the garden and preparing them for dinner the same night.

This recipe for zucchini boats was posted at my local gym and looked like a tasty recipe for my garden zucchini's. It was easy to make and did not disappoint. Next time I will try adding olives, broccoli and mushrooms for some extra veggie deliciousness.

Zucchini Boats

Ingredients:
6 small zucchinis
1 tbsp olive oil
1 clove garlic, minced
salt & pepper to taste
marinara sauce
mozzarella cheese
pepperoni slices
oregano

Directions:

Preheat oven to 400 F. Lay parchment paper on a rimmed backing sheet.

Cut zucchinis in half and lay on parchment paper skin side down. Mix olive oil and garlic in a bowl and brush on zucchinis. Sprinkle with salt and pepper. Top each zucchini with a spoonful of marinara sauce, sprinkle with mozzarella cheese and top with pepperoni. Bake for 12-18 minutes. Sprinkle with oregano.
