Please don't make the same mistake as me and use banana's that aren't overly ripe because you are too impatient to wait. Ripe banana's work best so buy a bunch, leave them on your counter and whip up some mint chocolate chip ice cream!

mexican chocolate pudding

Mexican Chocolate Pudding
I had a friend request this recipe several times and referred to it as "pudding for grown-up." I'm guessing it's the avocados and lack of artificial everything they put in store bought puddings that makes it "grown-up."

If you are not a fan of avocado, have no fear as you will not taste it but it will help to give the pudding it's creamy texture. My husband does not like avocados and still enjoys this desert.

Chocolate Chip Cookies
Cookies, ah - the joy of life.  Warm, chocolatey goodness can always make the day feel so much better. What I love about these cookies is that they only make 8. This is helpful for those that have low self-control. If you make a batch of cookies and have 24 tempting cookies waiting for you to eat, it will most likely end in disaster with you eating more than you wanted to. This recipe works for me when I am in the mood for a good chocolate chip cookie but only want a few. It has simple ingredients, is a healthier version of a chocolate chip cookie and still tastes great!

All I can really say is yum. Super yum!

sweet potato brownies

Sweet Potato Brownies
I really enjoy baking but I'd rather not exercise my will power to withstand having 24 brownies in my house. I want to be able to make a healthy treat option but also keep the recipe low in servings so that I am not tempted. This version creates 12 brownies but can easily be doubled if you are baking for a larger group. It's super moist and delicious but without all the loaded sugar found in traditional brownies.

minty thins

Minty - Thins
Girls Scout Cookies!!! Sigh - Oh, so delicious. I once at half a box of thin mint chocolate cookies as a kid and um, it didn't end well but they were so good I couldn't resist.

I was so excited to find this recipe and hopeful that if my willpower failed me again and I ate the whole batch of cookies, I would at least feel better knowing it has healthier ingredients.
